Small Bowl
Kitchen Towels
- 1 cup cherry tomatoes ripe, firm
- 1 cup mozzarella balls small bocconcini or ciliegine
- fresh basil leaves preferably young and tender
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil extra virgin
- salt and pepper to taste
- skewers small wooden or bamboo
Rinse the cherry tomatoes and basil leaves under cold water and pat dry. Drain the mozzarella balls and set aside.
Thread one cherry tomato onto a small skewer, followed by a fresh basil leaf (fold if large), then one mozzarella ball. Optionally, add another basil leaf or tomato depending on skewer length. Repeat for all ingredients.
Whisk together the balsamic vinegar and olive oil in a small bowl. Add a pinch of salt and freshly cracked black pepper to taste.
Arrange the skewers on a serving platter and drizzle the balsamic and olive oil dressing evenly over them just before serving. Serve immediately.
- Use ripe but firm cherry tomatoes for the best texture and flavor.
- Drying ingredients well helps the dressing stick and prevents sogginess.
- Assemble skewers shortly before serving to keep basil fresh and mozzarella soft.
- Substitute mozzarella with firm tofu for a dairy-free version.
- Try adding fruit like watermelon or strawberries for a sweet and savory twist.
