Equipment

  • Mixing Bowl
  • Spatula
  • Measuring cups and spoons
  • Baking Sheet
  • Plastic Wrap or Container

Ingredients

  • 1.5 cups old-fashioned oats
  • 1 cup unsweetened coconut
  • 1 cup ground flaxseed
  • 1 cup unsweetened cocoa powder
  • 1 cup mini chocolate chips
  • 1 cup smooth peanut butter
  • 1 cup honey
  • 1 teaspoon peppermint extract

Instructions

  • Start by measuring out all your ingredients. This will make the process much smoother and help you avoid any last-minute surprises.
  • In a large mixing bowl, combine the old-fashioned oats, unsweetened coconut, ground flaxseed, and unsweetened cocoa powder. Stir until well mixed.
  • Add the smooth peanut butter, honey, and peppermint extract to the dry ingredients. Use your spatula to mix everything together until it forms a sticky, cohesive mixture.
  • Gently fold in the mini chocolate chips, ensuring they are evenly distributed throughout the mixture.
  • Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
  • Once all bites are formed, place the baking sheet in the refrigerator for at least 30 minutes. This will help them firm up and hold their shape.
  • After chilling, your Mint Chocolate Energy Bites are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator for up to a week or freeze them for longer storage.

Notes

  • Feel free to substitute peanut butter with almond butter for a different flavor.
  • Chilling the bites enhances their flavor as the ingredients meld together.
  • These bites can be made gluten-free by using certified gluten-free oats.
