Ingredients
  

  • 1 lb sirloin steak cut into cubes
  • 1 lb baby potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

Step 1: Prep Your Ingredients

  • Cut the sirloin steak into bite-sized cubes, roughly 1 to 1.5 inches. Halve the baby potatoes. Mince the garlic and chop the fresh rosemary finely.

Step 2: Cook the Potatoes

  • Heat 1 tablespoon of olive oil in your skillet over medium heat. Add the halved baby potatoes, cut side down, and season generously with salt and pepper. Cook undisturbed for about 8-10 minutes, turning occasionally until golden brown and tender. Remove and set aside.

Step 3: Sear the Steak Cubes

  • Add the remaining tablespoon of olive oil to the skillet and increase heat to medium-high. Add the steak cubes, season with salt and pepper, and sear for 2-3 minutes per side until browned but juicy. Sear in batches if needed.

Step 4: Make the Garlic Butter Sauce

  • Reduce heat to medium. Push steak cubes to one side of the skillet and add unsalted butter. Once melted, add minced garlic and chopped rosemary. Stir continuously for 1-2 minutes until fragrant and garlic is lightly golden.

Step 5: Combine and Finish Cooking

  • Return cooked potatoes to the skillet and mix with steak and garlic butter sauce. Toss gently to coat. Cook together for 2-3 minutes to meld flavors. Adjust seasoning with salt and pepper if needed.

Step 6: Serve and Enjoy

  • Serve hot straight from the pan. Pair with a green salad or steamed veggies if desired.

Notes

  • Do not overcrowd the pan to ensure proper searing and crispy potatoes.
  • Add garlic only after butter melts and stir constantly to avoid burning.
  • Use baby potatoes or cut larger potatoes smaller for even cooking.
  • Allow steak cubes to rest a few minutes after cooking for juiciness.
  • Leftovers store well refrigerated up to 3 days or frozen up to 2 months.
