Ingredients

Pasta Ingredients

  • 1 pound dried pasta (450 g)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 large tomato, chopped
  • 1 unit chili (optional) for a spicy kick
  • 1 tablespoon tomato paste
  • 1 unit bay leaf
  • 0.5 teaspoon dried basil
  • 1 tablespoon olive oil (15 ml)
  • 4 cups vegetable stock (1 liter)
  • to taste Salt & pepper

Instructions

  • Step 1: Prepare your ingredients by dicing the onion, mincing the garlic, and chopping the tomato. Slice the chili if using.
  • Step 2: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and chili, cooking for an additional minute.
  • Step 3: Stir in the chopped tomato and tomato paste, cooking for another 2-3 minutes to develop flavors.
  • Step 4: Pour in the vegetable stock, add the dried basil, bay leaf, salt, and pepper. Stir well and bring to a boil.
  • Step 5: Once boiling, add the dried pasta. Stir occasionally and cook according to package instructions, usually around 8-12 minutes, until al dente.
  • Step 6: Remove from heat, discard the bay leaf, and adjust seasoning with more salt and pepper if necessary.
  • Step 7: Serve hot, garnished with fresh herbs or grated cheese if desired.

Notes

For added flavor, consider sautéing chopped bell peppers or carrots with the onion. For a creamier sauce, stir in a splash of cream or Greek yogurt before serving.
