Instructions
Step 1: Prepare your ingredients by dicing the onion, mincing the garlic, and chopping the tomato. Slice the chili if using.
Step 2: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and chili, cooking for an additional minute.
Step 3: Stir in the chopped tomato and tomato paste, cooking for another 2-3 minutes to develop flavors.
Step 4: Pour in the vegetable stock, add the dried basil, bay leaf, salt, and pepper. Stir well and bring to a boil.
Step 5: Once boiling, add the dried pasta. Stir occasionally and cook according to package instructions, usually around 8-12 minutes, until al dente.
Step 6: Remove from heat, discard the bay leaf, and adjust seasoning with more salt and pepper if necessary.
Step 7: Serve hot, garnished with fresh herbs or grated cheese if desired.
Notes
For added flavor, consider sautéing chopped bell peppers or carrots with the onion. For a creamier sauce, stir in a splash of cream or Greek yogurt before serving.
