Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Then, mix in the ricotta cheese, fresh orange juice, and orange zest until well combined.
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet.
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.
In a small bowl, whisk together the powdered sugar and orange juice until smooth. Drizzle this glaze over the cooled cookies.
Melt the dark chocolate and drizzle it over the glazed cookies.
