Ingredients
  

For the Truffles:

  • 36 cookies Mint Oreo Cookies
  • 8 ounces Cream Cheese (softened)
  • 2.5 cups Semi-Sweet Chocolate Chips
  • 8 teaspoons Coconut Oil (divided)
  • 1 teaspoon Mint Extract
  • 1 cup White Chocolate Chips
  • 6 drops Green Food Coloring (optional)
  • Green and Brown Jimmie Sprinkles (optional)

Directions:

  • Step 1: Prepare the Cookie Mixture
    Start by placing the 36 Mint Oreo cookies into a food processor. Pulse until they are finely crushed, resembling coarse crumbs. Transfer the crumbs to a mixing bowl and add in the softened cream cheese. Use a spatula or your hands to mix until fully combined and a dough forms.
  • Step 2: Form the Truffles
    Using your hands, scoop out about a tablespoon of the cookie mixture and roll it into a ball. Place the rolled truffles onto a baking sheet lined with parchment paper. Repeat until all the mixture is used up, then chill the truffles in the refrigerator for about 30 minutes. This helps them firm up for easier coating.
  • Step 3: Melt the Chocolate
    In a double boiler or microwave-safe bowl, combine the semi-sweet chocolate chips with 4 teaspoons of coconut oil. Melt the chocolate, stirring until smooth and glossy. If you're using a microwave, heat in 30-second intervals, stirring in between.
  • Step 4: Coat the Truffles
    Remove the chilled truffles from the refrigerator. Using a fork or a candy dipping tool, dip each truffle into the melted chocolate, ensuring it’s fully coated. Allow the excess chocolate to drip off and place the coated truffles back onto the parchment-lined baking sheet.
  • Step 5: Decorate
    If you’re using green food coloring, melt the white chocolate chips with the remaining 4 teaspoons of coconut oil. Mix in the green food coloring until desired color is achieved. Drizzle the colored chocolate over the truffles and finish with optional jimmie sprinkles for a festive touch.
  • Step 6: Chill Again
    Once decorated, return the truffles to the refrigerator and chill for another 30 minutes to allow the coating to set completely.

Notes

  • For a richer taste, consider using dark chocolate chips.
  • These truffles can be made ahead of time and stored in the fridge for up to 2 weeks.
