  • Start by gathering all your ingredients. Measure out the whole-wheat flour, baking powder, honey or maple syrup, salt, eggs, almond milk, and coconut oil. Having everything ready makes the process much smoother.
  • In a large mixing bowl, combine the whole-wheat flour, baking powder, and sea salt. Whisk them together until they’re well mixed. This ensures that the baking powder is evenly distributed, leading to perfectly fluffy pancakes.
  • In another bowl, beat the two large eggs. Then, stir in the almond milk and melted coconut oil. If you’re using honey, mix it in now until fully incorporated.
  • Make a well in the center of your dry ingredient mixture. Pour in the wet ingredients and gently stir to combine. Be careful not to overmix; it’s okay if there are a few lumps. Overmixing can lead to dense pancakes.
  • Heat a skillet or griddle over medium heat and lightly coat it with cooking spray or a bit of coconut oil. This will prevent the pancakes from sticking and help them achieve a beautiful golden color.
  • For each pancake, pour about ¼ cup of batter onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.
