Ingredients
  

For the Pancit:

  • 8 oz. rice sticks (230g)
  • 2 tablespoons cooking oil
  • 3 cloves garlic minced
  • 1/2 small onion sliced
  • 4 oz. boneless and skinless chicken thigh or chicken breast cut into pieces (125g)
  • 4 oz. shrimp shelled and deveined (125g)
  • 2 oz. green cabbage thinly sliced (60g)
  • 2 oz. carrots cut into thin strips (60g)
  • 2 stalks scallions cut into 2-inch (5 cm) strips
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • Salt to taste
  • 3 dashes ground black pepper

Instructions
 

Directions:

  • Step 1: Prepare the Rice Sticks - Soak the rice sticks in warm water for about 30 minutes until softened. Drain and set aside.
  • Step 2: Heat the Oil - In a large skillet or wok, heat the cooking oil over medium heat until hot but not smoking.
  • Step 3: Sauté the Aromatics - Add the minced garlic and sliced onion to the skillet. Sauté for about 2 minutes, or until onions are translucent and fragrant.
  • Step 4: Cook the Chicken - Add chicken pieces to the skillet, cooking for 4-5 minutes until browned and cooked through. Stir frequently to prevent sticking.
  • Step 5: Add the Shrimp - Toss in the shrimp and cook for an additional 2-3 minutes until they turn pink and opaque.
  • Step 6: Add the Vegetables - Stir in sliced cabbage, carrots, and scallions. Cook for about 3 minutes until vegetables are tender but still crisp.
  • Step 7: Mix in the Rice Sticks - Add soaked rice sticks to the skillet, tossing everything together.
  • Step 8: Season the Dish - Pour in soy sauce, oyster sauce, and fish sauce. Season with salt and black pepper. Toss until noodles are evenly coated and heated through.
  • Step 9: Serve and Enjoy - Remove from heat and serve your Pancit hot, garnished with extra scallions if desired.

Notes

  • Soak the rice sticks until they're al dente; they'll continue to cook when added to the pan.
  • Add other proteins like pork or beef for a heartier dish.
  • Adjust the sauces according to your taste preference; more soy sauce for saltiness or more oyster sauce for richness.
  • Consider garnishing with lemon or calamansi juice before serving for added flavor.
