Ingredients
  

  • 2 eggs eggs at room temperature
  • 1 cup milk at room temperature
  • 1 cup all-purpose flour
  • 1.5 tablespoons basil and walnut pesto
  • 3 tablespoons grated Parmesan cheese

Instructions
 

  • Preheat your oven to 425°F (220°C) to ensure it’s hot and ready for the popovers.
  • Use a light coating of cooking spray or butter to grease the popover pan.
  • In a mixing bowl, combine the eggs and milk, whisking them together until well blended. Gradually add the flour, whisking until the batter is smooth.
  • Fold in the basil and walnut pesto along with the grated Parmesan cheese until evenly distributed.
  • Pour the batter into the prepared popover pan, filling each cup about halfway.
  • Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the popovers are puffed and golden brown.
  • Remove the popovers from the oven and let them cool for a few minutes before gently removing them from the pan.

Notes

  • Make sure your eggs and milk are at room temperature for optimal mixing and rising.
  • Avoid overmixing the batter to keep popovers light and airy.
  • Do not open the oven door while baking to ensure proper rising.
