Instructions
 

Prepare the Peaches

  • Wash, peel, and slice peaches into even slices. In a large bowl, combine sliced peaches with granulated sugar, lemon juice, and cornstarch. Stir until peaches are well coated.

Mix the Dry Ingredients

  • In a separate bowl, whisk together all-purpose flour, baking powder, and salt until well combined.

Combine Wet Ingredients

  • Pour melted unsalted butter into the dry mixture, then add milk and vanilla extract. Stir gently until just combined; batter will be thick but pourable.

Layer and Bake

  • Preheat oven to 350°F (175°C). Pour peach mixture into a greased 9x9-inch baking dish and spread evenly. Spoon batter over peaches in dollops to create a rustic topping.
  • Bake for 45-50 minutes until the topping is golden brown and a toothpick comes out clean. The peach juices should be bubbling around the edges.
