Beans & Sauce:
- 2 15-ounce cans kidney beans drained and rinsed
- 1 15-ounce can pinto beans drained and rinsed
- 1 14.5-ounce can petite diced tomatoes do not drain
- 1 cup pizza/marinara/pasta sauce
- 1 tablespoon dried oregano
- 1 5-ounce package mini pepperoni divided
- 1 teaspoon freshly ground black pepper
- 2 cups shredded mozzarella cheese
- 2 teaspoons fresh parsley finely minced for garnishing
Preparation Steps:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the drained and rinsed kidney beans and pinto beans.
Add the can of petite diced tomatoes (do not drain!) to the bowl.
Pour in one cup of your favorite pizza or marinara sauce.
Sprinkle in the dried oregano and freshly ground black pepper.
Add half of the mini pepperoni package to the mixture and stir everything together.
Fold in two cups of shredded mozzarella cheese into the bean mixture.
Pour the entire mixture into a 9x13-inch baking dish, spreading it evenly.
Sprinkle the remaining mini pepperoni on top of your bean mixture.
Place the baking dish in the preheated oven and bake for about 30-35 minutes.
Let it cool for a few minutes, then garnish with finely minced fresh parsley and serve warm.
