Ingredients
  

Beans & Sauce:

  • 2 15-ounce cans kidney beans drained and rinsed
  • 1 15-ounce can pinto beans drained and rinsed
  • 1 14.5-ounce can petite diced tomatoes do not drain
  • 1 cup pizza/marinara/pasta sauce
  • 1 tablespoon dried oregano
  • 1 5-ounce package mini pepperoni divided
  • 1 teaspoon freshly ground black pepper
  • 2 cups shredded mozzarella cheese
  • 2 teaspoons fresh parsley finely minced for garnishing

Instructions
 

Preparation Steps:

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the drained and rinsed kidney beans and pinto beans.
  • Add the can of petite diced tomatoes (do not drain!) to the bowl.
  • Pour in one cup of your favorite pizza or marinara sauce.
  • Sprinkle in the dried oregano and freshly ground black pepper.
  • Add half of the mini pepperoni package to the mixture and stir everything together.
  • Fold in two cups of shredded mozzarella cheese into the bean mixture.
  • Pour the entire mixture into a 9x13-inch baking dish, spreading it evenly.
  • Sprinkle the remaining mini pepperoni on top of your bean mixture.
  • Place the baking dish in the preheated oven and bake for about 30-35 minutes.
  • Let it cool for a few minutes, then garnish with finely minced fresh parsley and serve warm.

Notes

  • You can customize this recipe with your favorite pizza toppings.
  • Add crushed red pepper flakes for extra heat!
  • This dish can be made ahead of time and stored in the refrigerator.
