- 0.75 cup sugar
- 2 large eggs room temperature
- 2 tsp pure vanilla extract
- 0.5 cup buttermilk or plain kefir, room temperature
Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: Line your muffin tin with cupcake liners.
Step 3: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
Step 4: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
Step 5: Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
Step 6: Alternately add the dry ingredients and buttermilk to the butter mixture, mixing until just combined.
