Ingredients
  

  • 2 tablespoons olive oil
  • 4 pieces chicken breasts juicy and tender
  • 2 tablespoons peri peri seasoning for marinating
  • 2 pieces onions sliced
  • 2 pieces sweet potatoes peeled and cubed
  • 4 pieces mini corn on the cobs cut in half
  • Fresh cilantro for garnish
  • 1 piece red chili sliced, for garnish

Instructions
 

  • Step 1: Preheat your oven to 425°F (220°C) for a perfect roast.
  • Step 2: In a mixing bowl, combine olive oil and peri peri seasoning. Add chicken breasts, coating them well in the marinade. Let sit for 15-30 minutes.
  • Step 3: Peel and chop sweet potatoes into cubes, slice onions into wedges, and cut mini corn cobs in half.
  • Step 4: Arrange marinated chicken breasts on a baking tray, scatter chopped vegetables around them, drizzle with olive oil, and sprinkle with peri peri seasoning.
  • Step 5: Roast in the oven for 25-30 minutes until chicken is cooked through and vegetables are tender.
  • Step 6: Let the tray bake rest for a few minutes, then garnish with cilantro and red chili before serving.

Notes

  • For extra heat, add sliced jalapeños or more peri peri seasoning.
  • You can marinate chicken and chop vegetables a day in advance.
  • Check chicken’s internal temperature to avoid undercooking.
