- 4 pieces chicken breasts juicy and tender
- 2 tablespoons peri peri seasoning for marinating
- 2 pieces onions sliced
- 2 pieces sweet potatoes peeled and cubed
- 4 pieces mini corn on the cobs cut in half
- Fresh cilantro for garnish
- 1 piece red chili sliced, for garnish
Step 1: Preheat your oven to 425°F (220°C) for a perfect roast.
Step 2: In a mixing bowl, combine olive oil and peri peri seasoning. Add chicken breasts, coating them well in the marinade. Let sit for 15-30 minutes.
Step 3: Peel and chop sweet potatoes into cubes, slice onions into wedges, and cut mini corn cobs in half.
