- 1 cup fresh pineapple juice For the best flavor, use freshly pressed pineapple juice
- 1 cup coconut milk Use canned coconut milk for richness and creaminess
- 0.5 cup crushed ice Helps chill and slightly dilute the drink for a smooth texture
- 1 tablespoon honey or agave syrup optional; adds a touch of sweetness
- pineapple slices for garnish
- maraschino cherries for garnish
If you don’t have fresh pineapple juice ready, start by blending fresh pineapple chunks until smooth, then strain through a fine mesh sieve to remove any pulp.
In a blender, add 1 cup of fresh pineapple juice, 1 cup of coconut milk, and 1/2 cup of crushed ice. Add 1 tablespoon of honey or agave syrup if desired.
Blend on high speed for about 30 seconds to 1 minute until creamy and frothy with a slushy texture.
Taste and adjust sweetness by adding more honey or agave syrup if desired. Thin with pineapple juice or coconut milk if too thick.
Pour into chilled glasses and garnish with a pineapple slice and a maraschino cherry. Serve immediately and enjoy.
- Use freshly pressed pineapple juice for the best flavor and natural sweetness.
- For a vegan version, use agave syrup instead of honey.
- Prepare the pineapple juice and coconut milk mixture up to 24 hours in advance but add crushed ice just before serving to maintain texture.
