Ingredients
  

  • 1 cup fresh pineapple juice For the best flavor, use freshly pressed pineapple juice
  • 1 cup coconut milk Use canned coconut milk for richness and creaminess
  • 0.5 cup crushed ice Helps chill and slightly dilute the drink for a smooth texture
  • 1 tablespoon honey or agave syrup optional; adds a touch of sweetness
  • pineapple slices for garnish
  • maraschino cherries for garnish

Instructions
 

  • If you don’t have fresh pineapple juice ready, start by blending fresh pineapple chunks until smooth, then strain through a fine mesh sieve to remove any pulp.
  • In a blender, add 1 cup of fresh pineapple juice, 1 cup of coconut milk, and 1/2 cup of crushed ice. Add 1 tablespoon of honey or agave syrup if desired.
  • Blend on high speed for about 30 seconds to 1 minute until creamy and frothy with a slushy texture.
  • Taste and adjust sweetness by adding more honey or agave syrup if desired. Thin with pineapple juice or coconut milk if too thick.
  • Pour into chilled glasses and garnish with a pineapple slice and a maraschino cherry. Serve immediately and enjoy.

Notes

  • Use freshly pressed pineapple juice for the best flavor and natural sweetness.
  • For a vegan version, use agave syrup instead of honey.
  • Prepare the pineapple juice and coconut milk mixture up to 24 hours in advance but add crushed ice just before serving to maintain texture.
