For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup butter melted
- 1/4 cup granulated sugar
For the Cream Cheese Layer:
- 1 8-ounce package cream cheese room temperature
- 1 cup powdered sugar
- 1 16-ounce container Cool Whip divided
For the Pistachio Layer:
- 2 small boxes pistachio instant pudding mix
- 3 cups whole milk
- Chopped pistachios (optional)
Instructions:
Step 1: Prepare the Crust - In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until resembling wet sand. Press into a 9x13-inch baking dish and set aside.
Step 2: Make the Cream Cheese Layer - Beat cream cheese and powdered sugar until smooth. Fold in 1 cup of Cool Whip and spread over the crust.
Step 3: Prepare the Pistachio Pudding - Whisk together pistachio pudding mix and cold milk for about 2 minutes until thickened. Pour over the cream cheese layer and spread evenly.
Step 4: Finish with Cool Whip - Top with remaining Cool Whip and sprinkle chopped pistachios if desired.
Step 5: Chill and Serve - Cover with plastic wrap and refrigerate for at least 4 hours. Cut into squares and serve.
