For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 1/4 cup granulated sugar

For the Cream Cheese Layer:

  • 1 8-ounce package cream cheese room temperature
  • 1 cup powdered sugar
  • 1 16-ounce container Cool Whip divided

For the Pistachio Layer:

  • 2 small boxes pistachio instant pudding mix
  • 3 cups whole milk
  • Chopped pistachios (optional)

  • Step 1: Prepare the Crust - In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until resembling wet sand. Press into a 9x13-inch baking dish and set aside.
  • Step 2: Make the Cream Cheese Layer - Beat cream cheese and powdered sugar until smooth. Fold in 1 cup of Cool Whip and spread over the crust.
  • Step 3: Prepare the Pistachio Pudding - Whisk together pistachio pudding mix and cold milk for about 2 minutes until thickened. Pour over the cream cheese layer and spread evenly.
  • Step 4: Finish with Cool Whip - Top with remaining Cool Whip and sprinkle chopped pistachios if desired.
  • Step 5: Chill and Serve - Cover with plastic wrap and refrigerate for at least 4 hours. Cut into squares and serve.

Notes

  • Ensure cream cheese is at room temperature to avoid lumps.
  • Add a few drops of pistachio extract for intense flavor.
  • Chill overnight for best flavor and texture.
