Ingredients
  

  • 1 can Fiesta Nacho Cheese Soup 10.5-oz
  • 1 cup Chicken broth
  • 1 cup Instant rice
  • 1 cup Salsa
  • 1 cup Shredded cheddar cheese

Instructions
 

  • In a medium saucepan, combine the can of Fiesta Nacho Cheese Soup and the chicken broth. Stir them together over medium heat until they are well mixed and start to warm up.
  • Once the cheese mixture is heated through, stir in the salsa to add flavor contrast.
  • Add the instant rice to the pot, stirring well to coat all the rice in the cheesy salsa mixture. Bring to a gentle boil.
  • Once boiling, cover the saucepan with a lid and remove it from heat. Let it sit for about 5 minutes to allow the rice to absorb the flavors.
  • After the rice has absorbed the liquid, fluff it with a fork and sprinkle the shredded cheddar cheese on top. Cover again and let it sit for a couple of minutes until the cheese melts.
  • Give the rice a final stir to mix in the melted cheese, then serve warm.

Notes

  • Use vegetable broth for a vegetarian version.
  • Opt for low-fat cheese to reduce calories.
  • Stir in cooked veggies like bell peppers or spinach for added nutrition.
