For the Cookie:
- 2 Tbsp butter softened
- 1/4 cup light-brown sugar packed
- 1 Tbsp whisked egg acts as a binder
- 1/4 cup all-purpose flour
- 1/4 cup quick oats
- 1/8 tsp baking soda
- 1/8 tsp cinnamon
- 1 pinch salt
- 2 Tbsp raisins or 3 Tbsp chocolate chips
- 1 1/2 Tbsp chopped pecans or walnuts (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine 2 tablespoons of softened butter and 1/4 cup of packed light-brown sugar. Use a whisk or fork to mix them together until creamy. Add in the 1 tablespoon of whisked egg and stir until fully incorporated.
In a separate bowl, whisk together 1/4 cup of all-purpose flour, 1/4 cup of quick oats, 1/8 teaspoon of baking soda, 1/8 teaspoon of cinnamon, and a pinch of salt.
Gradually add the dry mixture to the wet mixture, stirring until just combined.
Gently fold in 2 tablespoons of raisins (or 3 tablespoons of chocolate chips) and 1 1/2 tablespoons of chopped pecans or walnuts if using.
Scoop the cookie dough onto a baking sheet lined with parchment paper, shaping it into a round cookie about 1/2 inch thick. Bake in the preheated oven for 10-12 minutes.
Once baked, remove the cookie from the oven and let it cool on the baking sheet for a few minutes before transferring it to a wire rack.
