For the Melts:
- 3 to 4 cups broccoli florets
- 1 to 2 tablespoons olive oil
- Kosher salt to taste
- pepper to taste
- 4 slices sourdough bread
- ½ cup pimento cheese
- ½ cup freshly grated cheddar cheese
Directions:
Step 1: Preheat your oven to 425°F (220°C). Wash and cut the broccoli into bite-sized florets.
Step 2: In a mixing bowl, toss the broccoli florets with olive oil, kosher salt, and pepper until coated.
Step 3: Spread the seasoned broccoli on a baking sheet and roast for about 15-20 minutes, stirring halfway through.
Step 4: Spread pimento cheese on one side of each slice of sourdough bread.
Step 5: Top the pimento cheese with roasted broccoli and sprinkle with cheddar cheese. Close the sandwiches.
Step 6: In a skillet over medium heat, cook the assembled sandwiches with a little olive oil for 3-4 minutes on each side.
