Ingredients:
- 2 pounds Potatoes Yukon Gold or red potatoes
- 3 tablespoons Olive Oil Extra virgin recommended
- 4 cloves Garlic minced
- ½ cup Parmesan Cheese grated
- 2 tablespoons Fresh Rosemary chopped
- 2 tablespoons Fresh Thyme chopped
- Salt to taste
- Black Pepper to taste
Instructions:
Step 1: Preheat your oven to 425°F (220°C).
Step 2: Wash and scrub 2 pounds of potatoes. Cut them into bite-sized pieces, about 1 to 1.5 inches in size.
Step 3: In a large mixing bowl, combine the potato pieces with 3 tablespoons of olive oil, 4 cloves of minced garlic, ½ cup of grated parmesan cheese, 2 tablespoons of chopped fresh rosemary, 2 tablespoons of chopped fresh thyme, salt, and pepper. Toss to coat.
Step 4: Spread the seasoned potatoes in a single layer on a baking sheet.
Step 5: Roast for 25-30 minutes, flipping halfway through.
Step 6: Check for doneness; they should be golden brown and crispy on the outside.
Step 7: Remove from the oven, cool slightly, and serve hot.
- Store leftovers in an airtight container for up to 3 days.
- Reheat in the oven to restore crispiness.
