Ingredients
  

Dough Ingredients

  • 15 grams instant yeast
  • 3 tablespoons granulated sugar plus 1 teaspoon for proofing the yeast
  • 3 tablespoons lukewarm water
  • 150 ml milk (½ cup)
  • 1 large egg
  • a pinch salt
  • 6 tablespoons vegetable oil
  • 500 grams all-purpose flour

Cinnamon Filling Ingredients

  • 5 tablespoons granulated sugar for the filling
  • 2 tablespoons ground cinnamon
  • 2 tablespoons unsalted butter or a plant-based alternative

Instructions
 

  • Step 1: Activate the Yeast - In a small bowl, combine the lukewarm water with 1 teaspoon of granulated sugar and the instant yeast. Stir gently and let it sit for about 5-10 minutes until foamy.
  • Step 2: Prepare the Dough - In a large mixing bowl, combine the milk, egg, vegetable oil, and the remaining 3 tablespoons of sugar. Mix well. Once the yeast is activated, add it to this mixture. Sprinkle in a pinch of salt and gradually add the all-purpose flour, one cup at a time, stirring until a dough starts to form.
  • Step 3: Knead the Dough - Transfer the dough onto a floured surface and knead for about 10 minutes, or until the dough is smooth and elastic. Form the dough into a ball and place it in a lightly oiled bowl, covering it with a clean kitchen towel. Let it rise in a warm place for approximately 1 hour, or until doubled in size.
  • Step 4: Make the Cinnamon Filling - In a small bowl, mix together the 5 tablespoons of sugar and 2 tablespoons of ground cinnamon. Set aside.
  • Step 5: Shape the Plushki - After the dough has risen, punch it down to release the air. Roll the dough into a large rectangle, about 1/4 inch thick. Spread the 2 tablespoons of softened butter over the surface of the dough, then sprinkle the cinnamon sugar mixture on top.
  • Step 6: Cut and Roll - Slice the dough into strips, about 1 inch wide. Roll each strip up tightly, starting from one end. Place the rolled buns seam side down on a baking sheet lined with parchment paper.
  • Step 7: Second Rise - Cover the shaped rolls with a damp cloth and let them rise for another 30-40 minutes until they puff up.
  • Step 8: Bake the Buns - Preheat your oven to 180°C (350°F) during the last 15 minutes of the second rise. Bake for 15-20 minutes, or until the buns are golden brown.
  • Step 9: Cool and Enjoy! - Allow the Plushki to cool slightly on a wire rack before serving. Dust with powdered sugar if desired.

Notes

These buns can be frozen after baking. Store in an airtight container for up to 2 days at room temperature or refrigerate for about a week.
