Ingredients
  

  • 120 grams oat bran (about 3/4 cup)
  • 2 cups water
  • 1/4 cup milk (any milk of your choice)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • Black pepper (to taste)
  • 1/2 teaspoon sesame oil
  • 5 ounces sliced shiitake mushrooms
  • 1 green onion (thinly sliced)
  • 1 tablespoon low sodium soy sauce
  • 2 fried eggs
  • For topping: Crushed red pepper flakes, black sesame seeds, sriracha, sliced green onion, and sesame oil.

Instructions
 

  • In a medium saucepan, combine the oat bran, water, and milk. Bring to a gentle boil over medium heat, stirring occasionally. Once boiling, reduce the heat to low and let it simmer for about 5-7 minutes until the mixture thickens.
  • Add the garlic powder, onion powder, kosher salt, and black pepper to the oat bran mixture. Stir well to ensure the seasonings are evenly distributed, and cook for an additional 2 minutes.
  • In a frying pan, heat the sesame oil over medium heat. Add the sliced shiitake mushrooms and sauté for about 4-5 minutes until they are golden and tender. Add the low sodium soy sauce and sliced green onion, stirring to combine. Cook for another minute until fragrant.
  • In the same frying pan, crack two eggs and fry them to your preferred doneness. A runny yolk adds a lovely richness to the dish, but feel free to cook them longer if you prefer.
  • In a serving bowl, scoop out the savory oat bran mixture. Top it with the sautéed shiitake mushrooms and the fried eggs.
  • Finish your Savory Asian Oat Bran with crushed red pepper flakes, black sesame seeds, a drizzle of sriracha, and more sliced green onion as desired.

  • Do not overcook the oat bran; it can become too thick and gummy.
