  • 2 cups Jasmine rice
  • 13.6 ounce coconut milk, whole fat 1 can (400 ml)
  • ½ cup water
  • 1 teaspoon salt

Instructions
 

  • Step 1: Rinse the Jasmine rice under cold running water until the water runs clear.
  • Step 2: In a medium-sized pot, combine the rinsed rice, coconut milk, water, and salt. Stir gently to combine.
  • Step 3: Place the pot over medium heat and bring to a gentle boil. Once boiling, reduce heat to low, cover, and let simmer for 18-20 minutes.
  • Step 4: Remove from heat and let the rice rest for 10 minutes with the lid on.
  • Step 5: Fluff the rice gently with a fork and serve warm, garnished with fresh herbs if desired.

Notes

For extra flavor, consider adding a bay leaf or fresh cilantro while cooking. Adjust salt to taste.
