Ingredients
  

Sausages

  • 4 pieces Sausages of your choice Vegan or any type preferred

Vegetables

  • 1 large Potato Peeled and chopped into chunks
  • 1 piece Red onion Peeled and sliced into wedges
  • 4 cloves Garlic Tips cut off, leave peel on
  • 1 cup Pumpkin or butternut squash Sliced
  • ½ cup Mushrooms Sliced

Seasonings

  • 2 tablespoons Olive oil
  • 3 tablespoons Fajita seasoning
  • 1 teaspoon Dried oregano
  • 1 teaspoon Sea salt

Instructions
 

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: Prepare the vegetables by peeling and chopping the potato, slicing the onion and mushrooms, and getting the squash ready.
  • Step 3: Drizzle olive oil on a baking sheet and layer the potatoes, pumpkin, onion, and mushrooms.
  • Step 4: Sprinkle fajita seasoning, oregano, and sea salt over the vegetables and toss to coat.
  • Step 5: Nestle the sausages among the veggies without slicing them.
  • Step 6: Roast in the oven for 25-30 minutes, stirring halfway through.
  • Step 7: Serve and enjoy!

Notes

For even roasting, cut vegetables into uniform sizes. You can also experiment with different sausages and seasonings.
