Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Prepare the vegetables by peeling and chopping the potato, slicing the onion and mushrooms, and getting the squash ready.
Step 3: Drizzle olive oil on a baking sheet and layer the potatoes, pumpkin, onion, and mushrooms.
Step 4: Sprinkle fajita seasoning, oregano, and sea salt over the vegetables and toss to coat.
Step 5: Nestle the sausages among the veggies without slicing them.
Step 6: Roast in the oven for 25-30 minutes, stirring halfway through.
Step 7: Serve and enjoy!
Notes
For even roasting, cut vegetables into uniform sizes. You can also experiment with different sausages and seasonings.
