Equipment

  • Large Skillet
  • Measuring cups and spoons
  • Sharp Knife
  • Spatula or tongs

Ingredients

For the Chicken:

  • 1 pound boneless skinless chicken thighs or breasts - both work wonderfully, but thighs are particularly juicy.
  • 1 teaspoon ground cumin - adds a warm, earthy flavor.
  • 1 teaspoon chili powder - provides a little kick and depth.
  • 1 teaspoon salt - enhances all the flavors.
  • 1 teaspoon ground black pepper - for a touch of heat.
  • 2 tablespoons olive oil - for cooking and flavor.
  • ½ cup honey - for sweetness and glaze.
  • 2 tablespoons fresh lime juice - about 1 lime, for brightness.
  • 2 teaspoons lime zest - about 1 lime, to intensify the lime flavor.
  • 2 tablespoons soy sauce - adds umami richness.
  • 1 teaspoon minced garlic - for aromatic flavor.

Instructions

Instructions:

  • Start by patting the chicken dry with paper towels. This will help achieve a nice sear. If using chicken breasts, consider slicing them in half horizontally for quicker cooking and even seasoning.
  • In a small bowl, mix together the ground cumin, chili powder, salt, and black pepper. Sprinkle this spice mixture evenly over both sides of the chicken.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken to the skillet. Cook for about 5-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to check for doneness—165°F (75°C) is the safe internal temperature for chicken.
  • While the chicken is cooking, whisk together the honey, lime juice, lime zest, soy sauce, and minced garlic in a medium bowl until well combined.
  • Once the chicken is fully cooked, pour the honey lime sauce over the chicken in the skillet. Reduce the heat to medium, and let it simmer for 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken beautifully.
  • Remove the skillet from heat and serve the chicken warm. This dish pairs wonderfully with rice, quinoa, or a fresh salad. Drizzle any remaining sauce from the skillet over the chicken for an extra burst of flavor.

Notes

  • Feel free to adjust the sweetness by adding more or less honey based on your preference.
  • For a gluten-free option, use tamari instead of soy sauce.
  • This dish is perfect for meal prep; the flavors only get better as they meld together over time.
