Ingredients
  

  • 4 ounces cream cheese softened and cut into small chunks
  • 1 6 oz container plain non-fat Greek yogurt
  • 1 1/2 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped pecans toasted if preferred
  • 3 ripe bananas mashed
  • 1/2 cup honey or agave syrup
  • 1/4 cup coconut oil melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease your 9-inch round cake pans to prevent sticking.
  • In a large mixing bowl, add the mashed bananas, honey (or agave syrup), melted coconut oil, eggs, and vanilla extract. Use an electric mixer to beat these ingredients together until they are well combined and smooth.
  • In another bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix, as this can result in a dense cake.
  • Gently fold in the chopped pecans, ensuring they are evenly distributed throughout the batter.
  • Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a cooling rack.
  • While the cakes are cooling, prepare the frosting. In a mixing bowl, combine the softened cream cheese, Greek yogurt, maple syrup, and cinnamon. Beat with an electric mixer until the mixture is smooth and creamy.
  • Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of the maple frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
