In a bowl, combine the olive oil, low sodium tamari or soy sauce, balsamic vinegar, maple syrup, liquid smoke, garlic powder, and smoked paprika. Whisk everything together until well combined.
Once the tofu is pressed, cut it into cubes, slices, or any shape you prefer. The size will depend on how you plan to use the tofu.
Place the cut tofu in the shallow dish or zip-top bag. Pour the marinade over the tofu, ensuring all pieces are well coated. If using a dish, cover it with plastic wrap; if using a bag, seal it tightly. Marinate in the refrigerator for at least 30 minutes, or up to overnight for a more intense flavor.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the marinated tofu pieces in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway through, until the tofu is golden and slightly crispy.
