  • 1 shell puff pastry thawed according to directions
  • 1/4 cup BBQ sauce
  • 1/2 cup shredded Mozzarella cheese
  • 1 head cauliflower roasted and sliced
  • 3 tablespoons corn
  • 3 tablespoons petite black beans
  • 3 tablespoons chopped red pepper
  • 3 tablespoons chopped green pepper

  • Step 1: Preheat the Oven - Start by preheating your oven to 400°F (200°C). This will ensure that the puff pastry bakes to a golden perfection.
  • Step 2: Prepare the Cauliflower - While the oven is heating, take your cauliflower head and break it into florets. Toss the florets with a drizzle of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 20 minutes or until they are tender and lightly browned.
  • Step 3: Thaw the Puff Pastry - Thaw your puff pastry according to the package directions. Once it’s ready, roll it out on a floured surface to fit your baking sheet.
  • Step 4: Assemble the Pizza - Once the cauliflower is roasted, spread the BBQ sauce evenly over the puff pastry base. Layer the roasted cauliflower slices on top, followed by the corn, petite black beans, chopped red pepper, and green pepper. Finally, sprinkle the shredded Mozzarella cheese generously over the entire pizza.
  • Step 5: Bake the Pizza - Place your assembled pizza in the preheated oven and bake for about 15-20 minutes, or until the cheese is bubbly and the edges of the puff pastry are golden brown.
