Ingredients for Caramelized Plums

  • 2 tbsp Brown Sugar
  • 1 tbsp Water
  • 12 Plums, pitted and halved

Ingredients for Cake Batter

  • 170 grams Granulated Sugar
  • 115 grams Trex Non-Dairy Butter (plus extra for greasing)
  • 130 grams All-Purpose Flour
  • 2 Eggs
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • 1 tsp Ground Cinnamon

Instructions
 

  • Step 1: Preheat your oven to 180°C (350°F). Grease a round baking tin with Trex non-dairy butter. In a saucepan, combine brown sugar and water over medium heat until dissolved. Add plums cut-side down and cook for 5-7 minutes. Arrange plums in the baking tin.
  • Step 2: In a mixing bowl, beat Trex non-dairy butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  • Step 3: In a separate bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually fold dry ingredients into the butter mixture until just combined.
  • Step 4: Pour the batter over the arranged plums in the baking tin, spreading evenly.
  • Step 5: Bake for 30-35 minutes, or until a toothpick comes out clean. The edges should be golden brown.
  • Step 6: Allow the cake to cool in the tin for 10 minutes, then invert onto a serving plate. Serve warm or at room temperature.

Notes

Store leftovers in an airtight container at room temperature for up to two days or in the refrigerator for up to a week.
