Instructions
Step 1: Preheat your oven to 180°C (350°F). Grease a round baking tin with Trex non-dairy butter. In a saucepan, combine brown sugar and water over medium heat until dissolved. Add plums cut-side down and cook for 5-7 minutes. Arrange plums in the baking tin.
Step 2: In a mixing bowl, beat Trex non-dairy butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
Step 3: In a separate bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually fold dry ingredients into the butter mixture until just combined.
Step 4: Pour the batter over the arranged plums in the baking tin, spreading evenly.
Step 5: Bake for 30-35 minutes, or until a toothpick comes out clean. The edges should be golden brown.
Step 6: Allow the cake to cool in the tin for 10 minutes, then invert onto a serving plate. Serve warm or at room temperature.
