Ingredients
  

  • 1 each egg white at room temperature
  • 2 teaspoons water
  • 3 cups roasted cashews (if using lightly salted nuts, reduce the salt in the recipe)
  • 1 cup sugar
  • 1 cup brown sugar
  • ½ to 1 teaspoon cayenne pepper (adjust to your spice preference)
  • 1 teaspoon kosher salt

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C) for even roasting.
  • Step 2: Line a baking sheet with parchment paper.
  • Step 3: In a mixing bowl, combine the egg white and water, and whip until frothy.
  • Step 4: Add the roasted cashews to the frothy egg white mixture and stir gently.
  • Step 5: In a separate bowl, mix together the sugars, cayenne pepper, and kosher salt.
  • Step 6: Sprinkle the sugar mixture over the cashews and toss to coat evenly.
  • Step 7: Spread the cashews in a single layer on the prepared baking sheet.
  • Step 8: Bake for 15-20 minutes, stirring every 5 minutes.
  • Step 9: Remove from oven, cool completely, and enjoy!

Notes

  • Store in an airtight container at room temperature for up to two weeks.
  • For added flavor, try incorporating seasonal spices like cinnamon or orange zest.
  • If they lose crunch, reheat in a 350°F oven for a few minutes.
