Ingredients
  

  • 1 cup chunky salsa (sugar-free)
  • 1/4 cup balsamic vinegar

Instructions
 

  • Start by rinsing the boneless, skinless chicken breast under cold water. Pat it dry with paper towels, then season it lightly with salt and pepper if desired.
  • In a non-stick skillet, heat a drizzle of olive oil over medium heat. Once the oil is hot, add the chicken breast to the skillet. Sear it for about 4-5 minutes on one side until it's golden brown.
  • Flip the chicken over and pour in the chunky salsa and balsamic vinegar. Reduce the heat to low and cover the skillet. Let it simmer for about 10-12 minutes or until the chicken is cooked through (internal temperature of 165°F).
  • Once cooked, remove the chicken from the skillet and slice it. Drizzle with the salsa-balsamic sauce from the skillet. Serve it alongside your favorite sides for a complete meal!
