Ingredients
  

  • 2 pounds mixed nuts almonds, pecans, walnuts, and cashews
  • 2 large egg whites room temperature
  • 2 tablespoons water
  • 1 cup brown sugar light or dark
  • 1 cup white granulated sugar
  • 1 tablespoon kosher salt
  • 1 teaspoon cayenne pepper adjust to heat preference
  • 2 teaspoons cinnamon

Instructions
 

  • Preheat your oven to 300°F (150°C) to roast the nuts slowly for a perfect crunch.
  • Line a large rimmed baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, whisk the egg whites and water until frothy to help the sugar adhere.
  • Add the mixed nuts to the frothy egg white mixture and stir until evenly coated.
  • In a separate bowl, mix the brown sugar, white sugar, kosher salt, cayenne pepper, and cinnamon.
  • Sprinkle the sugar and spice mixture over the nuts and toss until completely coated.
  • Spread the coated nuts on the prepared baking sheet in an even layer.
  • Bake for about 25-30 minutes, stirring every 10 minutes until golden brown and fragrant.
  • Remove from the oven and let cool completely on the baking sheet for a crunchy finish.

Notes

  • Store in an airtight container at room temperature for up to two weeks.
  • For longer storage, freeze in a freezer-safe container for up to three months.
  • Adjust the cayenne pepper for your desired spice level.
