- 2 pounds mixed nuts almonds, pecans, walnuts, and cashews
- 2 large egg whites room temperature
- 2 tablespoons water
- 1 cup brown sugar light or dark
- 1 cup white granulated sugar
- 1 tablespoon kosher salt
- 1 teaspoon cayenne pepper adjust to heat preference
- 2 teaspoons cinnamon
Preheat your oven to 300°F (150°C) to roast the nuts slowly for a perfect crunch.
Line a large rimmed baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, whisk the egg whites and water until frothy to help the sugar adhere.
Add the mixed nuts to the frothy egg white mixture and stir until evenly coated.
In a separate bowl, mix the brown sugar, white sugar, kosher salt, cayenne pepper, and cinnamon.
Sprinkle the sugar and spice mixture over the nuts and toss until completely coated.
Spread the coated nuts on the prepared baking sheet in an even layer.
Bake for about 25-30 minutes, stirring every 10 minutes until golden brown and fragrant.
Remove from the oven and let cool completely on the baking sheet for a crunchy finish.
