Ingredients
  

  • 1 medium ripe banana
  • 2 tablespoons light canola or vegetable oil
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 1/3 cups milk

Instructions
 

  • Start by mashing the ripe banana in a large mixing bowl until smooth.
  • Add the light canola oil and eggs to the mashed banana. Whisk until well combined, then pour in the milk and mix until the batter is smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, salt, granulated sugar, and ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined.
  • Preheat your waffle iron according to the manufacturer’s instructions.
  • Pour an appropriate amount of batter onto the iron and cook according to your waffle iron's instructions, usually about 4-5 minutes.
  • Carefully remove the waffles from the iron and serve immediately with your favorite toppings.
