In a heavy-bottomed saucepan, combine the granulated sugar, 3 cups of water, lemon juice, and salt. Heat over medium heat, stirring until the sugar has completely dissolved. Once dissolved, stop stirring and let the mixture come to a boil.
Step 3: Add Cornstarch Mixture
Once your sugar syrup has reached a boil, reduce the heat to low. Slowly whisk in the cornstarch mixture, ensuring there are no lumps. Add the cream of tartar and continue to stir constantly for about 10-15 minutes, or until the mixture thickens and becomes translucent.
Step 4: Flavor It Up
Once thickened, remove the saucepan from the heat. Stir in the rosewater (if using), raspberry extract, orange extract, and food coloring. If you’re adding chopped pistachios, fold them in at this stage for added texture and flavor.
Step 5: Set the Mixture
Pour the mixture into a prepared square baking pan lined with parchment paper. Spread it out evenly, and let it cool at room temperature for at least 4 hours or overnight for best results.
Step 6: Cut and Dust
Once set, sprinkle a generous amount of powdered sugar over the top of the Turkish Delight. Use a sharp knife to cut it into squares or rectangles. Dust the sides of the pieces with more powdered sugar to prevent sticking.
Step 7: Store and Enjoy
Store your Turkish Delight in an airtight container at room temperature. It will keep for several weeks—if it lasts that long! Enjoy with tea, coffee, or simply as a sweet treat throughout the day.
