- 1 cup strong brewed coffee cooled
- 3 large eggs separated
- 1/2 cup granulated sugar
- 1 cup mascarpone cheese
- 1 teaspoon vanilla extract
- 1 package ladyfinger cookies
- unsweetened cocoa powder for dusting
Start by brewing 1 cup of strong coffee. Let it cool completely to room temperature to prevent soggy ladyfingers.
In a heatproof bowl, whisk together the egg yolks and granulated sugar. Place the bowl over a pot of simmering water (double boiler) and whisk continuously for about 5 minutes until pale, thick, and slightly warm.
Remove the egg yolk mixture from heat and allow it to cool slightly. Then, gently fold in the mascarpone cheese and vanilla extract until smooth and creamy.
In a clean mixing bowl, beat the egg whites until stiff peaks form. Carefully fold the whipped egg whites into the mascarpone mixture, preserving air for a fluffy texture.
Quickly dip each ladyfinger cookie into the cooled coffee, soaking just enough to absorb flavor without sogginess. Arrange a layer of soaked ladyfingers in the bottom of your serving dish.
Spread half of the mascarpone mixture evenly over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture on top.
Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set and meld flavors.
Before serving, dust the top generously with unsweetened cocoa powder.
