Ingredients
  

  • 1 teaspoon butter
  • 1 large egg
  • 1 pinch salt
  • 1 pinch pepper
  • 1 ounce freshly grated sharp white cheddar
  • 1 4-inch flour tortilla

For serving:

  • sliced tomatoes
  • green onions
  • avocado
  • jalapeno peppers
  • fresh cilantro

Instructions
 

  • Start by placing your non-stick skillet over medium heat. Add 1 teaspoon of butter and let it melt, swirling it around to coat the pan evenly.
  • In a small bowl, crack the large egg. Add a pinch of salt and pepper, then whisk it until the yolk and white are fully combined.
  • Pour the whisked egg into the skillet with the melted butter. Allow it to cook undisturbed for about 30 seconds, then gently stir with your spatula.
  • Sprinkle the freshly grated sharp white cheddar over the eggs. Gently fold the cheese into the eggs until it melts and is evenly distributed.
  • While the eggs finish cooking, warm the flour tortilla in a separate skillet for about 15-20 seconds on each side until it’s pliable.
  • Transfer the cheesy scrambled eggs onto the warm tortilla. Top your Tortilla Eggs with sliced tomatoes, chopped green onions, diced avocado, jalapeno peppers, and fresh cilantro.
  • Carefully roll up the tortilla or fold it in half, and your Tortilla Eggs are ready to serve. Enjoy them warm for the best experience!
