- 1 large egg
- 1 pinch salt
- 1 pinch pepper
- 1 ounce freshly grated sharp white cheddar
- 1 4-inch flour tortilla
For serving:
- sliced tomatoes

- fresh cilantro
Start by placing your non-stick skillet over medium heat. Add 1 teaspoon of butter and let it melt, swirling it around to coat the pan evenly.
In a small bowl, crack the large egg. Add a pinch of salt and pepper, then whisk it until the yolk and white are fully combined.
Pour the whisked egg into the skillet with the melted butter. Allow it to cook undisturbed for about 30 seconds, then gently stir with your spatula.
Sprinkle the freshly grated sharp white cheddar over the eggs. Gently fold the cheese into the eggs until it melts and is evenly distributed.
While the eggs finish cooking, warm the flour tortilla in a separate skillet for about 15-20 seconds on each side until it’s pliable.
