In a mixing bowl, mash the rinsed and drained white beans using a fork or a potato masher until mostly smooth, leaving some chunks for texture.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and diced red bell pepper, sautéing until fragrant and softened, about 3-4 minutes. Remove from heat and let cool slightly.
In the bowl with the mashed beans, add the sautéed vegetables, bread crumbs, Worcestershire sauce, egg, chopped chives, and ground turkey. Season with kosher salt and freshly ground black pepper. Mix until well combined, but avoid overmixing to keep the burgers tender.
Divide the mixture into four equal portions and shape each portion into a patty, about ¾ inch thick.
In the same skillet, add the remaining 2 tablespoons of olive oil over medium heat. Once hot, add the patties to the skillet and cook for about 5-6 minutes on each side, or until golden brown and cooked through.
While the burgers are cooking, toast the slices of country-style bread until golden and crispy. This will provide a wonderful contrast to the tender burgers.
Place each burger on a slice of toasted bread. Add your favorite toppings, such as lettuce, tomato, or avocado, and finish with another slice of bread on top. Serve warm and enjoy!
