Ingredients

  • 1 lb Korean glass noodles

  • 2 cloves garlic minced
  • 1 large red bell pepper thinly sliced
  • 2 large carrots julienned
  • 8-10 whole shiitake mushrooms thinly sliced, stem discarded
  • 2 handfuls spinach or 1 crown of broccoli, chopped

  • Step 1: Prepare the Noodles - Begin by boiling water in a cooking pot. Once boiling, add the Korean glass noodles and cook according to package instructions, usually around 6-8 minutes, until they are al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  • Step 2: Make the Sauce - In a small bowl, whisk together the soy sauce, maple syrup, and sesame oil. This sweet and savory sauce will elevate the flavor of your noodles.
  • Step 3: Stir-Fry the Vegetables - In a large skillet or wok, heat a drizzle of sesame oil over medium-high heat. Add the yellow onion and garlic. Sauté for about 2 minutes, until fragrant. Then, add the red bell pepper, carrots, and shiitake mushrooms. Stir-fry for another 5-7 minutes, until the vegetables are tender yet still crisp.
  • Step 4: Combine Noodles and Sauce - Add the cooked noodles to the skillet with the sautéed vegetables. Pour the sauce over the noodles and toss everything together gently, ensuring the noodles are well coated in the sauce. Cook for another 2-3 minutes, allowing the flavors to meld.
  • Step 5: Add Greens - Finally, stir in the spinach or broccoli and cook for an additional minute until the greens are wilted but still vibrant.
