Watermelon Mint Lemonade

- 4 cups watermelon cubed, ripe and seedless
- 1/4 cup fresh mint leaves gently bruised
- 1/2 cup fresh lemon juice freshly squeezed
- 1/4 cup honey or agave syrup adjust to taste
- 4 cups water chilled

Start by cutting your watermelon into cubes. Remove any seeds if not using seedless watermelon. Measure out 4 cups of watermelon cubes and set aside.
Place the watermelon cubes and fresh mint leaves into a blender. Blend on high speed until smooth. Add more mint leaves for a stronger flavor if desired.
Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher. Press the pulp to extract as much juice as possible. Discard or save the pulp for other uses.
Add the fresh lemon juice and honey or agave syrup to the strained juice. Stir well until the sweetener is completely dissolved.
Pour in the 4 cups of chilled water and stir to combine. Taste and adjust sweetness or lemon juice if needed. Refrigerate for at least 30 minutes to chill and blend flavors.
Serve the lemonade over ice cubes in tall glasses. Garnish each glass with a lemon slice and a sprig of mint for a fresh presentation.
