Ingredients
  

  • 2 large eggs
  • 2 cups whole wheat flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon fine sea salt or table salt
  • 1 3/4 cups milk (any kind, we use 1%)
  • 1/2 cup olive oil (extra light or canola oil works well)
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon honey
  • 1 cup fresh blueberries (or frozen with 1 teaspoon whole wheat flour)

Instructions
 

  • Start by preheating your waffle maker according to the manufacturer’s instructions. Once it’s ready, lightly coat the plates with cooking spray to prevent the waffles from sticking.
  • In a large mixing bowl, whisk together the whole wheat flour, baking powder, and salt. This combination creates the base for your waffles and ensures they rise beautifully when cooked.
  • In another bowl, beat the eggs before adding the milk, olive oil, vanilla extract, and honey. Mix until everything is well combined and smooth.
  • Gradually pour the wet mixture into the dry mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  • Gently fold in the fresh blueberries (or if using frozen, coat them with a teaspoon of whole wheat flour before adding). This will prevent them from sinking to the bottom of the batter.
  • Once your batter is ready, pour the appropriate amount into your preheated waffle maker, following the machine’s instructions. Close the lid and cook until the waffles are golden brown and crispy, usually around 4-5 minutes.
  • Carefully remove the waffles from the waffle maker and serve immediately with your favorite toppings. Maple syrup, yogurt, or more fresh fruit pair wonderfully with these delicious waffles.

Notes

  • Ensure your waffle maker is fully preheated before adding the batter for the best texture.
  • If you prefer thinner waffles, add a bit more milk to the batter until your desired consistency is reached.
  • Using fresh blueberries is ideal, but frozen blueberries work just as well. Just make sure to thaw them beforehand.
  • These waffles can be customized with spices like cinnamon or nutmeg for an additional flavor dimension.
